Toasted Coconut Candy
Don’t you love food and snacks that bring back wonderful memories?
Some of my fond memories with loved ones and of the cultural immersions I’ve had revolve around shared meals and cooking experiments in the kitchen.
This toasted coconut candy is one of those snacks that bring back lovely childhood memories. I would make it with my siblings, although with sugar. Lately, I’ve been making it with honey. You can swap the honey with another liquid sweetener of your choice so long as you can brown it over heat.
INGREDIENTS
3 cups of unsweetened coconut chips
3/4 cup of pure honey
2 teaspoons of Baobab Balance & Beauty Blend
STEPS
Preheat a wide pan on the stove
Pour the honey into the pan
Stir in the coconut chips until they’re fully coated with honey
Let simmer over medium heat until the honey and chips mixture becomes sticky
Stir the mixture occasionally
Take the pan off the stove once the coconut candy is sticky enough with no runny liquid
Spread the coconut candy on a parchment-lined pan
Sprinkle the Baobab Balance & Beauty Blend over it and let it cool for about 5 minutes
