Coconut Mug Cake & Peanut Butter Smoothie

I have always believed in the power of clean eating and using food as medicine. As I continue to find ways to undo boring when it comes to what I eat, it has become easier and more enjoyable to feed my body with natural, healthy foods.

And trust me, this mug cake and green peanut butter smoothie combo counts as a healthy dessert. It is quick and easy to make. Plus it tastes divine.


INGREDIENTS

Peanut Butter Smoothie 

  • 1 cup of frozen banana

  • 1 cup of milk - I used almond milk 

  • 1 teaspoon of ORÍSUN Amaranth Daily Greens Blend

  • 1 tablespoon of unsweetened peanut butter 

  • 1 tablespoon of honey or sweetener of choice  

Coconut Mug Cake 

  • 2 tablespoons of coconut flour

  • 1 medium egg (optional)

  • 1/2 teaspoon of baking soda

  • 1 teaspoon of ORÍSUN Baobab Balance & Beauty Blend

  • 2 tablespoons of honey or sweetener of choice  

  • 1 tablespoon of coconut oil 

  • 3 tablespoons of milk - I used almond milk


STEPS FOR PEANUT BUTTER SMOOTHIE

  • Blend everything in a blender

STEPS FOR COCONUT MUG CAKE

  • Mix the wet ingredients in a mug then add the dry ingredients and mix again

  • Microwave for 1.5 minutes

  • Bring out and let cool a bit

Top the coconut mug cake with the peanut butter smoothie and enjoy!
