Nutty Froyo Bites

Do you enjoy satisfying your sweet tooth in peace without feeling guilty? I sure do! That’s why I had so much fun making these froyo bites multiple times this past weekend. It was even more enjoyable sharing them with my family and friends. I made them using our Amaranth Daily Greens Blend. Give the recipe a try and feel free to add to or reduce the amount of sweetener.


INGREDIENTS

  • 1/2 cup of plain yogurt

  • 1/4 cup of puréed frozen banana

  • 2 teaspoons of Amaranth Daily Greens Blend

  • 1 tablespoon of honey

  • 1 teaspoon of vanilla extract

  • 1/4 cup of almond flakes or another nut of choice

  • 1/4 cup of unsweetened coconut flakes

  • 1/2 cup of melted dark chocolate

STEPS FOR FROYO

  • Mix all the ingredients - except the dark chocolate - together in a bowl

  • Put the fillings in an ice cube tray or silicone mold

  • Place the tray/mold in the freezer for 2 hours or until the fillings are frozen

STEPS FOR CHOCOLATE COATING

  • Melt the dark chocolate with a bit of coconut oil in a pot or melt it in a bowl in the microwave. Make sure to stir occasionally if using the microwave method.

FINAL STEPS

  • Bring out frozen froyo filling then coat with the melted chocolate. You can drop the froyo filling into the melted chocolate and pick it up with a fork.

  • Place the coated filling on a plate lined with parchment paper and keep in the freezer until the chocolate is set

And that’s it. Bring out the froyo bites and enjoy them alone or with your loved ones!
